All this angst over "pink slime" has made one thing clear: We don't always know what we're getting when we bite into a big juicy burger.

Which leaves unanswered some of the most basic questions in the debate over what the meat industry calls lean finely textured beef, a processed meat filler that experts say has found its way into much of the ground beef consumed in the United States.

But as a professional eater, I needed to know two things: What does this stuff do to the taste and texture of ground beef? And how can consumers know when they're eating it?

Neither answer came easily, the former because of the sheer volume of beef I needed to eat, the latter because of the rather opaque way ground beef is made.

For schools, that opacity began to clear Thursday, when the U.S. Department of Agriculture announced that as of the fall the National School Lunch Program will allow districts to choose ground beef that does not contain the product. Previously, it was difficult for schools to know whether the beef they bought from the feds had it or not.

That's because pink slime ? no matter what you call it or what you think of it ? really is made from beef and therefore doesn't need to be listed as a separate ingredient.

But Thursday's announcement doesn't do much for the average consumer.

At the grocer, a steak is a steak, and it is nearly always labeled by the cut of beef it's from. There was a time when ground beef was similarly labeled and you knew at least roughly what part of the animal you were getting. And though some packages still indicate "ground chuck" or "ground sirloin," today most is labeled simply as "ground beef."

Most consumers don't care. They'd rather focus on another part of the label ? the fat percentage. And producers don't care. It has made it easier for them to take a more amalgamated approach to ground beef, using whatever cuts they want or have without worrying about spelling it out.

Now introduce lean finely textured beef, and the meat picture is further muddied.

The product is made from bits of meat left over from other cuts. It's heated and spun to remove the fat, then compressed into blocks for mixing into conventional ground beef. Because it's so lean and inexpensive, producers often mix it into fattier meat to produce an overall leaner product.

That means two packages labeled "ground beef 80 percent lean" may look and sound the same but be composed of different meats. One could be unadulterated ground beef made from cuts of meat containing 20 percent fat. The other could be made from poorer quality ? much fattier ? meat but cut with and made leaner by pink slime, a term coined by a federal microbiologist grossed out by it and now widely used by critics and food activists.

How do you tell the difference? For the most part, you don't.

"You can't differentiate beef from beef," said Jeremy Russell, a spokesman for the National Meat Association, which represents processors, suppliers and exporters. "Talking to your retailer would be the only way."

So that's what I did. But it got me only partial answers.

At grocer No. 1, the folks behind the butcher counter were able to show me one brand, a pricy "all-natural" ground beef that did not contain the meat filler. But for the many other and far less expensive varieties of ground beef? They had no way of knowing.

Grocer No. 2 presented the opposite problem. The workers there found one brand that definitely did have the pink stuff, but they couldn't say whether any others did or didn't.

And don't be fooled by the "all-natural" beef label at store No. 1. That term is unregulated, so it doesn't really mean anything. At another store, another brand of ground beef could be similarly labeled but still contain the meat filler.

But the term "organic" is regulated, and that provides a clue. If you can find it ? and are willing to pay the price ? ground beef labeled organic cannot contain lean finely textured beef.

Despite the odds, I had lucked out. Between the two grocers, I'd managed to identify two packages of 85 percent lean ground beef, one with pink slime and one without. Time to taste.

By label alone, it was clear we were talking different beef demographics. The pink slime-free product bragged that it was minimally processed and that the cows had been raised without antibiotics, growth hormones or animal byproducts in their food. Price ? $5.99 per pound. The pink slime version? Just a minimalist "compare and save." Price ? $3.09 per pound.

Outwardly, they seemed the same: They smelled the same, and they looked basically the same, though the pink slime sample was slightly lighter in color. Until you touched them. The all-natural sample was slightly fattier to touch. That seemed odd, since both products should have the same fat content.

For the taste test, I kept it simple and pure. I formed a half-pound of each ground beef into a thick burger patty, adding nothing to the meat. And though I prefer my burgers on the grill, I decided to fry these in a skillet because it's easier to control the cooking, ensuring both would be cooked to the same degree and under the same conditions.

I added nothing to the pan. Meat this fatty generally bleeds out a robust amount of grease, so I wasn't concerned with sticking. That was my second surprise. The pink slime patty released very little fat during cooking. The other patty gave off two or three times as much.

About 5 minutes per side, and I declared them medium-rare. After giving them a few minutes to rest, I seasoned them lightly with salt and pepper, then cut in.

First, the unadulterated burger. The aroma was luscious. The meat was juicy, tender and nicely seared. Where I'd cut, juices slowly dribbled out onto the plate, collecting in a pool. The taste was savory and meaty, with big beefy flavor. The chew had just the right texture, substantial but giving. Basically, everything you would want in a burger.

The pink slime burger also was perfectly seared and drew me in with an equally alluring aroma. But no juices collected on the plate. Or dribbled out. Or were apparent in the meat in really any way. The taste was ? OK. I took another taste of the first burger, then back to the pink slime burger.

It was not bad. But nor was it good. It was flat. I added more salt. No. It was simply one-dimensional.

And then there was the texture. Unpleasantly chewy bits of what I can only describe as gristle, though they were not visible, seemed to stud the meat of the pink slime burger. The result was a mealy chew that, while not overtly unpleasant, didn't leave me wanting another bite.

Of course, I did take another bite. In the interest of good journalism, I ate both burgers entirely. And then I felt sick. I'm confident that has nothing to do with slime of any sort.

COMMENTARY | I completely agree with Virginia Heffernan, who wrote at Yahoo! News' Machine Politics that there has been entirely too much focus this campaign season on gynecological issues and not enough focus on issues that really matter to women. Heffernan points out that in 2008, there were a lot of women involved in the election season, from candidates on both sides of the aisle to commentators and even entertainers. But there wasn't nearly the amount of abortion and birth control talk.

As a woman, the health care issues I think about in terms of politics and campaigns don't center around the subjects that are being hashed and rehashed this election cycle. I am, however, fascinated by the upcoming hearing by the U.S. Supreme Court regarding the health care law. I am interested -- if the law is found unconstitutional -- in how candidates propose we fix the most badly broken pieces of our health care system. I am interested in how the government, with its much needed deficit cuts, intends to provide the necessary health services to the soldiers who have returned from Iraq and Afghanistan. I am interested in health care policy as it ties in to energy policy via the EPA.

I am greatly interested in energy policy issues. I am interested in how the candidates feel about energy as it relates to the provision of jobs. I am interested in hearing someone find that beautiful balance between preserving the environment and achieving energy independence and an economy where people are thriving instead of merely surviving.

I'm interested in education. I want to know -- if it has been agreed that the No Child Left Behind laws should, themselves, be left behind -- what's next? How do we improve public education in this country? How do we increase the ability of the up and coming generations to find jobs and compete on a global basis?

There are many things I am concerned about. But, like Heffernan, I'm tired of listening to men talk about gynecology. Indeed, let's move on to more meaningful things, please.

The Challenge for Kids' Health Insurance - Keeping Them Enrolled ...


When the breadwinner of a Hmong family in Merced, Calif., lost his employer-sponsored health insurance coverage when he got laid off from his job last year, he didn?t think to find a public insurance program for his 5-year-old son.

So when his son got sick a few months later and had to be taken to hospital, the family had to turn to the boy?s grandparents to pick up the treatment costs.

The father believed that public health insurance programs were not as good as private ones, a commonly held belief among many members of the Hmong community, noted Palee Moua, director of cultural services at Healthy House in Merced.

Many immigrant families have an innate distrust of children?s public health care programs, or a lack of understanding of how to enroll in them, she said.

?Some families are scared; some are confused,? observed Odella Recio, health program specialist with Cover the Kids, a direct service organization in Sacramento. Recio spoke during a Feb. 27 legislative briefing in Sacramento organized by the Greenlining Institute that focused on the implementation of health care reform in California?s diverse communities.

This fear and confusion have resulted in at least 404,000 of the state?s eligible children not taking advantage of Medi-Cal or Healthy Families, two of the better known health insurance programs in the state for low-income children under 19, according to a recent UCLA study that analyzed data gathered by the California Health Interview Survey.??According to another survey, this one based on an Urban Institute analysis of American Community Survey, the number of uninsured children who are eligible for coverage could be as high as 695,0000.?

Whatever the number, ?two out of three children in California are eligible for public health insurance programs but not enrolled in them,? observed Mike Odeh, health policy associate with the non-profit, Children Now.

Medi-Cal is California?s health care program for the state?s low-income children ? adults can enroll in it too -- while Healthy Families is the state?s health program for children whose parents earn too much to qualify for Medi-Cal but don?t make enough to afford private coverage.

Of the children eligible for Medi-Cal or Healthy Families, 285,000, or 70.6 percent, are Latino, while 65,000, or 16.1 percent, are white, according to the UCLA study. Figures are not available in the study for African American and Asian American and Pacific Islanders.

Almost 60 percent of Latino children are not eligible for either program, the UCLA study shows.

Half of those children who are currently not enrolled in either Medi-Cal or Healthy Families once were, said Jessica Rothaar of PICO California (People Improving Communities through Organizing), a faith-based, grassroots advocacy organization.

?The focus and emphasis historically has been on enrollment,? said Cover the Kids executive director Kelly Bennett-Wofford. ?It?s easier to get a funder interested in enrollment. The retention work is not as well funded.?

There are two myths that keep parents who are undocumented, or who are waiting to get permanent residency, from enrolling their children in public health programs, according to health care advocates. The first is that parents believe they would have to reveal their own immigration status on the application form.

The second myth is the fear that by making their children ?public charges,? the parents are jeopardizing their own pathway to citizenship.

?There is an incredible lack of knowledge among parents on coverage options,? asserted Suzie Shupe, executive director of California Coverage & Health Initiatives, which works to help children in California get access to quality, affordable health insurance.

Another reason for low enrollment is that many parents mistakenly think their child?s health insurance card doesn?t have an expiration date. In fact, for a child to stay on Medi-Cal or Healthy Families, parents have to renew enrollment every year.

?Medi-Cal is a complex program, and there are a lot of questions to be answered,? Shupe said, noting that the process can be ?extremely intimidating,? especially for those with language barriers.

In 2003, as a cost-cutting measure, Gov. Gray Davis eliminated funding for California?s Certified Application Assistors (CAA) program that had been launched in 1998. The program, provided by trained community members, assured that outreach was local, in-person and linguistically appropriate and culturally sensitive.

The funding was reinstated in 2005, but was eliminated again by Gov. Arnold Schwarzenegger in 2009.

?Obviously, it was not a state priority,? Shupe said.

Now, ?most of the services like outreach are not reimbursable, so there?s not much incentive,? Oscar Gomez, chief executive officer of Health Outreach Partners, said at the Sacramento briefing.

?Getting that funding reinstated? is crucial to bringing the enrollment figures up in Medi-Cal and Healthy Families, Shupe said.

When the Affordable Care Act (ACA) is fully implemented in 2014, she added, the application process in public health care programs will be simplified, and Health Benefit Exchanges will have to generate revenue to hire ?navigators? to help people get health insurance.

Meanwhile, despite lack of financial assistance from the state, organizations such as Cover the Kids continue to help enroll kids and ? the real challenge -- keep them enrolled.

CT-Analyst, the Naval Research Laboratory's (NRL's) rapid urban plume modeling and hazard assessment system, was handed over to the chief of the Hamburg Fire Brigade in a ceremony held at the City Hall in Hamburg, Germany, on January 26.

The ceremony was marked by addresses by the president of the Federal Office of Civil Protection and Disaster Assistance and the Hamburg minister for Internal Affairs. Under a Cooperative Research and Development Agreement (CRADA) with the University of Hamburg, a custom German language version of CT-Analyst with the specific geometry of the city of Hamburg (the second largest city in Germany) was developed and validated. University researchers made wind and tracer measurements in a scale model of the city in their large environmental wind tunnel. These measurements were used to validate results from CT-Analyst. Upon successful blind validation at University of Hamburg, CT-Analyst was declared ready for operational testing by the Hamburg Fire Brigade. Dr. Gopal Patnaik, who heads the Laboratory for Advanced Computational Physics in NRL's Laboratory for Computational Physics and Fluid Dynamics, represented NRL at the ceremony in Hamburg.

NRL's CT-Analyst provides accurate, instantaneous, three-dimensional predictions of chemical, biological, & radiological (CBR) agent transport in urban settings. In the past, more accuracy has always meant more computing and more computing means more delay. Waiting even a fraction of a minute for a simplified scenario computation can be far too long for first responders to make timely situational assessments. Therefore, CT-Analyst uses the best computations possible prepared well ahead of time and captures their salient results in a highly compressed database to be manipulated and displayed instantly.

The CT-Analyst product can provide answers to first responders in approximately 0.05 seconds versus computational fluid dynamics models, which can take one to two hours to run per scenario. CT-Analyst also provides more detailed information, quicker, and with better results than industry accepted "Puff/Plume" models that take several minutes to run.

Three fourths of fatalities from direct exposure to a CBR agent can be traced back to the first 15 minutes of an event. If effective response begins in three to five minutes, 85% of these fatalities can be avoided. CT-Analyst allows users in the field and at operational nerve centers to work together, using the same data to effectively monitor and adjust planning and logistics as information is gathered or updated. CT-Analyst allows those analyzing a CBR scenario to view exposed and soon-to-be exposed regions based on very limited data. CT-Analyst also allows emergency management personnel to instantaneously project optimal evacuation paths based on the current evolving situation assessment.

Under a Cooperative Research and Development Agreement (CRADA) with the University of Hamburg, a custom German language version of CT-Analyst with the specific geometry of the city of Hamburg (the second largest city in Germany) was developed and validated. University researchers made wind and tracer measurements in a scale model of the city in their large environmental wind tunnel. These measurements were used to validate results from CT-Analyst. Upon successful blind validation at University of Hamburg, CT-Analyst was declared ready for operational testing by the Hamburg Fire Brigade. Dr. Gopal Patnaik, who heads the Laboratory for Advanced Computational Physics in NRL's Laboratory for Computational Physics and Fluid Dynamics, represented NRL at the ceremony in Hamburg.

NRL's CT-Analyst provides accurate, instantaneous, three-dimensional predictions of chemical, biological, & radiological (CBR) agent transport in urban settings. In the past, more accuracy has always meant more computing and more computing means more delay. Waiting even a fraction of a minute for a simplified scenario computation can be far too long for first responders to make timely situational assessments. Therefore, CT-Analyst uses the best computations possible prepared well ahead of time and captures their salient results in a highly compressed database to be manipulated and displayed instantly.

The CT-Analyst product can provide answers to first responders in approximately 0.05 seconds versus computational fluid dynamics models, which can take one to two hours to run per scenario. CT-Analyst also provides more detailed information, quicker, and with better results than industry accepted "Puff/Plume" models that take several minutes to run.

Three fourths of fatalities from direct exposure to a CBR agent can be traced back to the first 15 minutes of an event. If effective response begins in three to five minutes, 85% of these fatalities can be avoided. CT-Analyst allows users in the field and at operational nerve centers to work together, using the same data to effectively monitor and adjust planning and logistics as information is gathered or updated. CT-Analyst allows those analyzing a CBR scenario to view exposed and soon-to-be exposed regions based on very limited data. CT-Analyst also allows emergency management personnel to instantaneously project optimal evacuation paths based on the current evolving situation assessment.
